Chinese Master Chef Au-yeung Chung-kei presents his signature poon choi, crafted with time-honored techniques and premium seasonal ingredients including: abalone, fish maw, salted chicken, roasted pork belly, Goose Web, sea cucumber, conpoy, black mushrooms, bean curd rolls, lion's head meatballs, dace fish balls, beef tendon, bean curd knots, daikon radish, Chinese cabbage, water chestnuts with black moss, and crispy rice noodle rolls.
